Recently I enjoyed two wines from the Spanish region of Toro. One was quite delightful, whilst the other left me wanting and I was reminded of a valuable lesson from the experience.

During a recent visit to Ft. Lauderdale, I had the pleasure of watching my Uruguayan friend assemble an authentic asado. Although there were only six diners, he deemed it essential that the traditional portions be prepared. The result was enough extraordinary meat for 40 people.

It's not uncommon to see wine publications matching a particular artist or CD to a specific wine. Problem is, no one ever explains how they come up with such random pairings.
